Organic Chicken Tomato Wine Sauce

2 organic chicken breasts
1/4 c flour
1/4 c olive oil
1/2 c onion, chopped
5 garlic cloves, chopped
1 chopped tomato (very ripe)
3 c white wine
3 T tarragon, chopped


Lightly coat chicken with flour. Sauté chicken in olive oil for 4 minutes per side. Remove. Sauté onion and garlic in olive oil for 3 minutes. Add tomatoes and wine. Reduce by half. Add chicken and continue to cook for 3 minutes. Top with tarragon.
