INGREDIENTS
2 | organic chicken breasts |
1/4 c | flour |
1/4 c | olive oil |
1/2 c | onion, chopped |
5 | garlic cloves, chopped |
1 | chopped tomato (very ripe) |
3 c | white wine |
3 T | tarragon, chopped |
DIRECTIONS:
Lightly coat chicken with flour. Sauté chicken in olive oil for 4 minutes per side. Remove. Sauté onion and garlic in olive oil for 3 minutes. Add tomatoes and wine. Reduce by half. Add chicken and continue to cook for 3 minutes. Top with tarragon.
