2 T cream
6 eggs
4 oz Monterey Jack Cheese, shredded
1 T butter
2 oz chorizo, chopped
1 c tomatoes, chopped
1/4 avocado, sliced




Preheat oven to 400 degrees. Whisk cream and eggs. Add cheese. Melt butter over medium heat in an oven-safe skillet. Pour egg mixture into skillet. Stir and cook for 2 minutes. Add chorizo and tomatoes. Bake for 10 minutes. Top with avocado.
