Bacon, Avocado, Spicy Roasted Red Pepper Sauce…
Chicken Focaccia is the only recipe in The Gourmet Bachelor cookbook not written by me. My girlfriend wrote it. The women who’s heart I tried to win with a tasty gourmet dinner on Friday Nights. She made this delicious chicken sandwich for me from left over bacon, avocado, focaccia and roasted red pepper sauce.
INGREDIENTS
Red Pepper Sauce
1 | rosted red pepper, peeled |
4 | garlic cloves |
5 T | extra virgin oil |
1 T | lemon juice |
3 T | honey |
1/2 t | cayenne pepper |
1/2 t | cumin |
Sandwich
2 | boneless chicken breasts |
2 | 6-inch focaccia squares |
4 | tomato slices |
4 | bacon strips, cooked |
6 | ripe avocado slices |
DIRECTIONS:
Red Pepper Sauce – Sauté peppers and garlic in 2 tablespoons of olive oil for 3 minutes. Add remaining ingredients and blend in a food processor.
Sandwich – Grill chicken for 4 minutes per side. Slice focaccia in half. Grill. Assemble sandwiches.
