Capri Bruschetta

Quick and easy cocktail party recipe that requires no forks, spoons or plates.

Bruschetta is the perfect Gourmet Bachelor recipe. It’s a breeze to make and there’s no clean up. Just buy fresh quality ingredients, cut up some bread, toast, top and serve. If you tried a Caprese salad, you tried my Capri Bruschetta. It’s the same ingredients sitting on top of a nice toasted slice of bread. I like to top the dish off with a slice of prosciutto di Parma and quality Extra Virgin Olive Oil.

INGREDIENTS

1 baguette, 1/4-inch slices
1/2 c extra virgin olive oil
3 ripe tomatoes, 1/4-inch slices, halved
10 basil leves
16 oz fresh mozzarella, 1/4-inch slices, halved
5 prosciutto di Parma slices, halved
1 T salt
1 T black pepper

DIRECTIONS:

Grill baguette slices for 1 minute per side. Remove. Drizzle half
of the olive oil on toast. Stack ingredients on the toast. Season with salt and pepper. Drizzle with remaining olive oil. Finito!
