PORK TENDERLOIN PANCETTA GOAT CHEESE

INGREDIENTS

8 oz pancetta, cubed
4 T olive oil
6 oz goat cheese
1 while pork tenderloin
1 T cumin
1 t cayenne
1 t cinnamon

DIRECTIONS:

Preheat oven to 350 degrees. Sauté pancetta in 1 tablespoon of olive oil until crisp. Remove and cool. Stir pancetta into cheese. With a long, thin knife, slice a hole through the center of pork tenderloin. Stuff pork with cheese and pancetta. Seal with toothpicks. Coat pork generously with spices. Sear pork in remaining olive oil for 2 minutes per side. Bake pork until meat thermometer reaches 145 degrees.
